King Charles’s beloved cheesy baked eggs recipe makes the ultimate comfort food

King Charles has long been rumoured to tuck into a boiled egg alongside every meal which is perhaps why he enjoys this comforting dish known as cheesy baked eggs.

The royal previously released the recipe on the Clarence House Instagram page, stating that it “can be made by using any number of our great British cheeses”.

Though fit for a royal, the dish is very simple to make from a combination of spinach, cherry tomatoes, strong soft cheese, double cream, hard cheese, and fresh basil leaves.

What’s more, its simplicity means it’s easy to adapt to suit any flavour palette.

But as a known lover of gardening and the great outdoors, the most authentic way to replicate the King’s favourite recipe is by using organic ingredients where possible.

Ingredients

  • 100g wilted spinach
  • One handful of cherry tomatoes or sundried tomatoes, quartered
  • 35g of strong soft cheese
  • One egg
  • 80ml double cream
  • 15g grated hard cheese
  • Fresh basil leaves

Cook the spinach in a pan with a little oil to wilt the greens, then butter a small oven-proof dish.

Line it with the wilted spinach, then make a well in the centre by parting the leaves a little

Place the quartered cherry tomatoes on top of the spinach bed, followed by small dots of the soft cheese.

Add the torn basil leaves to the dish then season it generously with salt and pepper.

Crack an egg into the centre of the spinach, where the well was made, then pour the double cream over the top of the raw egg.

Sprinkle over some hard-grated cheese before baking at 180C for 10 minutes. Remove the golden, bubbling dish from the oven and leave to stand for a few minutes before eating.
